  • 1 14oz package of extra firm tofu
  • 1/2 packet of low sodium taco seasoning
  • 3 cloves garlic
  • 1 bunch green onions
  • 1 red onion
  • 2 Roma tomatoes
  • 1 large green pepper
  • 1 cup white mushrooms
  • 1 tsp. turmeric
  • Corn tortillas
  • 2 tbsp grapeseed oil
  • Salt and pepper


  1. Finely chop the onion, tomatoes, peppers, green onions, and mushrooms
  2. In large pan, heat 2 tbsp of grape seed oil
  3. Add and sauté the red onion and garlic for 3-5 minutes until golden brown
  4. Crush firm tofu with spoon or hand until it looks like ground meat
  5. Add the tofu to the pan and sauté for 5 -7 minutes
  6. Add the chopped veggies- green onions, peppers, mushrooms, tomatoes and sauté for 5 minutes
  7. Add the turmeric and the 1/2 packet low sodium taco seasoning
