How To Make Healthy, Veggie-Loaded Tofu Tacos

Ingredients

  • 1 14oz package of extra firm tofu
  • 1/2 packet of low sodium taco seasoning
  • 3 cloves garlic
  • 1 bunch green onions
  • 1 red onion
  • 2 Roma tomatoes
  • 1 large green pepper
  • 1 cup white mushrooms
  • 1 tsp turmeric
  • Corn tortillas
  • 2 tbsp light olive oil
  • Salt and pepper

Instructions

  1. Finely chop the onion, tomatoes, peppers, green onions, and mushrooms.
  2. In large pan, heat 2 tbsp of grape seed oil.
  3. Add the red onion and garlic and sauté for 3-5 minutes until golden brown
  4. Crush firm tofu with spoon or hand until it looks like ground meat.
  5. Add the tofu to the pan and sauté for 5 -7 minutes.
  6. Add the remaining vegetables (green onions, peppers, mushrooms, tomatoes) and sauté for 5 minutes.
  7. Add the turmeric and the 1/2 packet low sodium taco seasoning.
  8. Serve over corn tortillas with your favorite taco toppings (cotija cheese, avocado, salsa, cilantro, pico de gallo, etc.)
