
How To Make Healthy, Veggie-Loaded Tofu Tacos
These tofu tacos are a tasty way to load up on wholesome, plant-based fuel — full of fiber, protein, and just the right amount of spice.
Ingredients
- 1 14oz package of extra firm tofu
- 1/2 packet of low sodium taco seasoning
- 3 cloves garlic
- 1 bunch green onions
- 1 red onion
- 2 Roma tomatoes
- 1 large green pepper
- 1 cup white mushrooms
- 1 tsp turmeric
- Corn tortillas
- 2 tbsp light olive oil
- Salt and pepper
Instructions
- Finely chop the onion, tomatoes, peppers, green onions, and mushrooms.
- In large pan, heat 2 tbsp of grape seed oil.
- Add the red onion and garlic and sauté for 3-5 minutes until golden brown
- Crush firm tofu with spoon or hand until it looks like ground meat.
- Add the tofu to the pan and sauté for 5 -7 minutes.
- Add the remaining vegetables (green onions, peppers, mushrooms, tomatoes) and sauté for 5 minutes.
- Add the turmeric and the 1/2 packet low sodium taco seasoning.
- Serve over corn tortillas with your favorite taco toppings (cotija cheese, avocado, salsa, cilantro, pico de gallo, etc.)
