
How To Make Healthy, Veggie-Loaded Tofu Tacos
This tofu taco recipe is a healthy helping of vegetarian, plant-based power for you, with lightly spiced protein and fiber.
Ingredients
- 1 14oz package of extra firm tofu
- 1/2 packet of low sodium taco seasoning
- 3 cloves garlic
- 1 bunch green onions
- 1 red onion
- 2 Roma tomatoes
- 1 large green pepper
- 1 cup white mushrooms
- 1 tsp. turmeric
- Corn tortillas
- 2 tbsp grapeseed oil
- Salt and pepper
Instructions
- Finely chop the onion, tomatoes, peppers, green onions, and mushrooms
- In large pan, heat 2 tbsp of grape seed oil
- Add and sauté the red onion and garlic for 3-5 minutes until golden brown
- Crush firm tofu with spoon or hand until it looks like ground meat
- Add the tofu to the pan and sauté for 5 -7 minutes
- Add the chopped veggies- green onions, peppers, mushrooms, tomatoes and sauté for 5 minutes
- Add the turmeric and the 1/2 packet low sodium taco seasoning
