Ingredients

  • 16 ounces fresh or frozen berries (approximately 3 ½ cups)
  • ¼ cup granular erythritol plant-based zero-calorie sweetener
  • ¼ cup granular allulose plant-based zero-calorie sweetener
  • 4 teaspoons pectin
  • ¼ cup cold water
  • 2 tablespoons chia seeds

Instructions

  1. Add the berries, erythritol, allulose, pectin, and water to a medium saucepan over medium heat. Stir gently until the berries become soft and easily mashable with a fork (it will likely be boiling or close to boiling).
  2. Remove from heat and mash with a fork to achieve a jam-like texture. Add chia seeds and stir. Refrigerate in an airtight container for at least 3 hours to allow it to set.
