Blueberry Banana Nut Bread Recipe
Oats, blueberries and walnuts make this loaf extra healthy.
- 1 ½ cups oat flour
- 1 tsp ground cinnamon
- ¼ cup brown sugar
- ¾ tsp baking soda
- 2 ripe bananas
- 1 tsp vanilla extract
- 2 tbsp coconut oil
- 2 tbsp almond milk
- ¼ cup walnuts
- ¼ cup fresh blueberries
- Preheat the oven to 350 degrees.
- Grease a mini loaf pan with cooking spray.
- In a large bowl, mix together the oat flour, cinnamon, brown sugar and baking soda.
- Mash the ripe bananas using a fork and add them to the bowl, along with the vanilla extract, coconut oil and almond milk.
- Using a hand mixer, blend ingredients together until well mixed.
- Fold in the walnuts and blueberries, making sure they are distributed evenly in the batter.
- Pour the batter into the mini loaf pan and bake for 50 minutes.
- Remove the loaf from the oven and cool for about 10 minutes before serving.
