
How to Make Healthy Roasted Vegetables
Learning how to roast vegetables may turn you into a Brussels sprouts lover.
Ingredients
- 1 tablespoon olive oil
- 1 stem fresh rosemary
- 12 ounces of fresh Brussels sprouts, halved
- 3 whole carrots, peeled and diced about 1 inch
- 3 1/2 ounces of shiitake mushrooms, stems removed and sliced
- 1 shallot, sliced
- 1 clove garlic, minced
- Fresh ground black pepper to taste
Instructions
- 1. Preheat oven to 350 degrees.
- 2. Warm olive oil and rosemary in cast iron skillet on stove over medium heat.
- 3. Add Brussels sprouts to pan, cut-side down, and cook for about 30 seconds. Then add carrots, mushrooms, shallot, garlic and pepper.
- 4. Stir and sauté vegetables for about three to five minutes on the stove. Then turn off stove and transfer skillet to the oven.
- 5. Cook in oven about 15 minutes.
- 6. Let cool and serve. (Mind the pan handle. It’s hot!)
