Ingredients

  • 1 tablespoon olive oil
  • 1 stem fresh rosemary
  • 12 ounces of fresh Brussels sprouts, halved
  • 3 whole carrots, peeled and diced about 1 inch
  • 3 1/2 ounces of shiitake mushrooms, stems removed and sliced
  • 1 shallot, sliced
  • 1 clove garlic, minced
  • Fresh ground black pepper to taste

Instructions

  1. 1. Preheat oven to 350 degrees.
  2. 2. Warm olive oil and rosemary in cast iron skillet on stove over medium heat.
  3. 3. Add Brussels sprouts to pan, cut-side down, and cook for about 30 seconds. Then add carrots, mushrooms, shallot, garlic and pepper.
  4. 4. Stir and sauté vegetables for about three to five minutes on the stove. Then turn off stove and transfer skillet to the oven.
  5. 5. Cook in oven about 15 minutes.
  6. 6. Let cool and serve. (Mind the pan handle. It’s hot!)
