BBQ Rosemary Pork (Recipe)
This easy and tasty roasted pork makes a perfect weeknight dinner idea.
Ingredients
- BBQ Rosemary Pork with Roasted Garlic
- 3 pork loin chops (4 ounces each)
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons pecan oil
- 1 dash table salt
- 1 teaspoon cayenne pepper (optional)
- Garlic Parsnip Puree
- 2 pounds raw parsnips
- 8 cloves garlic
- 1 tablespoon pecan oil
- 1 dash table salt
- 1 dash cayenne pepper (optional)
- 1/4 cup nonfat milk
Instructions
- Add oil, rosemary, salt, pepper, and pork to a plastic bag and mix until pork is thoroughly covered. Place in refrigerator for at least 30 minutes.
- Place pork on grill until done. The meat thermometer should read 165°.
- To prepare parsnips, preheat oven to 425°. Chop parsnips into bite-size pieces.
- Place parsnips and garlic cloves on baking sheet and drizzle pecan oil, salt, and pepper. Place in oven for 20 to 30 minutes, based on size of parsnips.
- Remove parsnips from oven and let them cool slightly. In a food processor, add parsnips, garlic, and milk. Blend together until the mixture is smooth.
- Serve with rosemary pork.
