Ingredients

  • BBQ Rosemary Pork with Roasted Garlic
  • 3 pork loin chops (4 ounces each)
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons pecan oil
  • 1 dash table salt
  • 1 teaspoon cayenne pepper (optional)
  • Garlic Parsnip Puree
  • 2 pounds raw parsnips
  • 8 cloves garlic
  • 1 tablespoon pecan oil
  • 1 dash table salt
  • 1 dash cayenne pepper (optional)
  • 1/4 cup nonfat milk

Instructions

  1. Add oil, rosemary, salt, pepper, and pork to a plastic bag and mix until pork is thoroughly covered. Place in refrigerator for at least 30 minutes.
  2. Place pork on grill until done. The meat thermometer should read 165°.
  3. To prepare parsnips, preheat oven to 425°. Chop parsnips into bite-size pieces.
  4. Place parsnips and garlic cloves on baking sheet and drizzle pecan oil, salt, and pepper. Place in oven for 20 to 30 minutes, based on size of parsnips.
  5. Remove parsnips from oven and let them cool slightly. In a food processor, add parsnips, garlic, and milk. Blend together until the mixture is smooth.
  6. Serve with rosemary pork.
